Monday Mornings....




My days start early.  Most mornings I arrive at work at 7 am, so I am always looking for a quick breakfast that helps me stay full and has some health benefits. I found these mini egg quiches on Pinterest and they're one of the few things I've actually made. Today, I took the time to eat at home, because usually I inhale them at my desk. I'm trying to ease into my day and start with a quiet environment, hoping that it will help relieve some of  the stress I experience at work.


They are extremely easy to prepare and warm up. I put them in Ziploc bags and grab two each morning. I also use a little salsa as seasoning (my sons extra Taco Bell packets come in handy).


Here are the simple ingredients, which provide enough to make many more batches.
You can add just about any vegetable you want,  



I use a heaping tablespoon of each ingredient.
I also added a pinch of cheese. 


 It takes 1/2 cup of egg whites to fill two muffin tins. 
Bake them at 350┬║ for 30 minutes.


They're so easy!
